Holiday Cocktails

  • 2 oz Metropoligin Gin
  • 3/4 oz Rosemary Simple Syrup (recipe below)
  • 1/2 oz Fresh Lemon Juice
  • 8 drops Allspice Bitters
  • 1 rosemary sprig

Combine all ingredients in an ice filled shaker. Shake vigorously for 15-20 seconds. Strain into a chilled coup or cocktail glass. Roll the rosemary sprig between your hands to aromatize. Garnish finished cocktail with aromatized rosemary sprig.

Rosemary Simple Syrup

  • 1 cup Water
  • 1 cup Granulated Cane Sugar
  • 1/4 cup Dried Rosemary

Bring water to a boil and remove from heat. Add sugar and stir until dissolved. Once and sugar is dissolved stir-in the rosemary and let it rest for 15 minutes, then strain and chill. Should last 2 weeks refrigerated

Cranberry Sauced Punch

  • 2 oz Wheaton Barley Vodka
  • 1 oz Unsweetened Cranberry Juice
  • 1 oz Lime Juice
  • 1 oz Ginger Simple Syrup (Recipe Below)
  • 1 oz Water

Combine all ingredients into an ice filler cocktail shaker, and shake until thoroughly chilled. Strain into an ice filled lowball glass, garnish with a ginger twist.

For a lighter bodied cocktail, stain cocktail into ice filled collins glass, top with soda water. This recipe can be batched for larger servings.

Ginger Simple Syrup

  • 1 cup Granulated Cane Sugar
  • 1 cup Water
  • 4 Tbsp Chopped Fresh Ginger

Add all ingredients to a medium sauce pan, bring to a boil, once at a boil reduce heat to a simmer. Let simmer for 15 minutes, then strain into a heat tolerant container and chill. Should last 2 weeks refrigerated.

  • 1 Gallon local cider (we use Fireside Orchards)
  • ½ tbsp. Ground Nutmeg
  • 6 Sweet Cinnamon Sticks
  • 1 tbsp cloves
  • ½ tbsp. chopped fresh orange peel
  • 1 Star anise
  • 1 tbsp chopped fresh ginger
  • 1 tbsp allspice
  • 2 vanilla beans
  • ½ cup local honey or maple syrup

Combine all dry ingredients in a cotton drawstring bag or wrap in cheese cloth and tie. Add the gallon of cider and honey/syrup to a large pot then suspend the bag of dry ingredients within the liquid. Bring to a boil then lower the heat to a simmer. Let simmer for 15 min.

Add 1.5-2oz of Loonshine Whiskey to a standard mug, fill the rest of the mug with infused cider, garnish with an orange twist and cinnamon stick, enjoy
